We started with two of the most regal grapes-pinot noir and chardonnay- and crafted it in the French Champagne region’s traditional méthode champenoise style. Aged for almost 4 years on the lees, the bubbles dance amongst delightful wild strawberry notes on both the aromatics and the palate. On closer attention, the aromas also evince wet stone, cookie dough, and crushed seashells. The palate is generous but balanced- sweet fruit checks pushy acidity. The finish runs chalky, with bountiful crisp fruit notes that linger.
